Rum & Raisin Fluffy Pancakes



Happy Pancake Day 🥞🥳




In this recipe I will take you through how to make fluffy pancakes with both a vegan and non-vegan recipe as well as a Las Olas Rum Syrup to accompany Raisin Pancakes.



Ingredients

Non - Vegan Pancakes


  • 200 grams Flour

  • 1 medium egg white

  • 250 ml Milk

  • 75 ml Sparkling Water

  • 2 Tbsp Melted Butter

  • 1 Tbsp Sugar

  • 1 Tsp Salt

  • 1 Tsp Baking Powder

  • 1 Tsp Vanilla Extract

  • Raisins* (optional)



Combine the flour, salt, sugar and baking powder in a bowl.


Add milk, sparkling water, butter and Vanilla extract to a jug and mix together.


Whisk the dry and wet ingredients together.


Beat egg white until it forms a stiff peak and fold into the batter.


* Fold in raisins to the batter for the raisin pancake option




Ingredients

Vegan Pancakes


  • 200 grams Flour

  • 300 ml Sparkling Water

  • 1 Tbsp Sugar

  • 1 Tsp Salt

  • 1 Tsp Baking Powder

  • Raisins (optional)

Add sparkling water and vanilla extract to a jug and mix together.


Whisk the dry and wet ingredients together.


* Fold in raisins to the batter for the raisin pancake option



Cooking Method


Heat up a non stick frying pan and add your batter using a jug to the centre of the pan which should ensure your pancakes come out as perfect circles.


once the pancakes start forming bubbles on top and drying out on the edges they are ready to flip.


repeat this until you have used up all the batter and serve.

  • 1 Tsp Salt

  • 1 Tsp Baking Powder

Ingredients

Las Olas Rum Syrup


  • 1/4 cup or 1 shot Las Olas Rum

  • 1 Tbsp Corn Flour

  • 1 cup Water

  • Quater lemon

  • 1/2 cup Light brown soft sugar

  • 1/2 cup dark brown sugar



Add corn flour and half a cup of cold water to the saucepan and stir together until it goes clear.


Add cups of sugar and mix into the cornflour until melted.


Add 1 cup of boiled water and lemon ( alternatively use lemon zest)


Add shot of Las Olas Rum.


Mix together and bring to a boil for about 5 minutes once boiled strain into jug or glass jar and allow to cool.




& there we have it, fluffy rum and raisin pancakes with a las olas rum syrup.
